Prime Rib Roast


Prime Rib Roast

 If you can resist the temptation to open the oven door, this is our families favorite recipe for making Prime Rib and we have been doing it this way for well over 10 years.
I know we are past the Holiday Season.  However, it is better to take the time and remember the joy of the holidays after they have passed. The stress of holiday shopping, cooking, family and other activities can make it feel like all we do is survive the holidays.  I don't think that it how our Savior intended it to be. So today I would like to relive some of the best parts of the Holiday Season for me and my family, and that is Christmas Day Prime Rib.

Chief Light is a fantastic cook.  He is the natural chef that I am not.  He doesn't measure, he doesn't read recipes.  He see's something and says, oh that looks good, let's make it.  The majority of the time it turns out wonderful, and his Prime Rib is in that category.  Family and friends alike show up at our home for his Prime Rib. When we call to invite our loved ones for Christmas dinner, the question always comes up, " Is Chief making his Prime Rib?"  When they get the answer they start drooling and the next statement is usually, "What time should we be there?"  It is that good!

This year I asked him to do the burden of actually measuring and writing things down.  He is a great man with a great heart and agreed to do so.  As you can see from the pictures, we use lots of vegetables and a great dry rub to give this tremendous flavor.  Great Prime Rib takes attention to detail from beginning to end. It doesn't take a lot of fancy ingredients or tremendous skill, just time and staying focused on doing and not doing some really simple things.

Grocery List:
5 lb. Prime Rib Roast - Choice or better
Cheese Cloth
Onion
Carrots
Celery
Garlic
Cherry Tomatoes
Fresh Rosemary
Dried Thyme
Kosher Salt
Pepper
Olive Oil

Purchase your Prime Rib for a reputable retailer who understand the importance of a Fat Cap and marbling.  That where the flavor of the meat comes from.  I would not purchase anything less than Choice grade of meat. Purchase your Prime Rib about 2 weeks in advance, so it has time to age in your refrigerator.  This will improve the flavor and tenderness of the meat.

After you have the Prime Rib home, wrap it in a fresh Cheese Cloth and put it in the refrigerator in a bag or container that is air tight for 1 week.  After a week, put a fresh Cheese Cloth on it and continue to allow it to rest for another week.  The day you are going to cook the Prime Rib, bring it out and let it come to room temperature. Typically a 5 lb. Prime Rib will take about 2 hours to come to Room Temperature.  While you are waiting you can prepare the Prime Rib Bed and the Prime Rib Rub.

Prime Rib Bed is a bed of vegetables that the Prime Rib will rest on while it is cooking.  It improves the flavor of the Prime Rib.  You can also serve the vegetables with the meal, as they will have a wonderful flavor from cooking in the Prime Rib drippings.

Prime Rib Bed:
3 heads of Garlic
2-6 Whole Carrots
3-4 Celery Stalks
1 Large Yellow Onion- Cut in Chunks
Handful of Cherry Tomatoes

You can add any vegetables that your family likes, just make sure they don't give off a aroma that your family doesn't like, as that will taint the smell and flavor of the Prime Rib.

After you have the Prime Rib Roast at room temperature it is time for the Dry Rub.

 Prime Rib Rub:
1   Tablespoon Fresh Rosemary Chopped
3   Cloves Garlic Chopped
1   Tablespoon Kosher Salt
1   Tablespoon Fresh Ground Pepper
1   Tablespoon Dried Thyme
1/4 Cup Olive Oil

Mix all the dry ingredients in a bowl.

Pat the Prime Rib Roast dry with a paper towel.
Coat the Prime Rib with the Olive Oil on all sides.
Evenly spread the Dry Ingredients across the entire Roast, making sure you get the ends.






Move your oven rack to the center of your oven.  Then Preheat your oven to 500 degrees.  I know this sounds high; however, you are going to place the Prime Rib in the oven to get that nice outer crust that great Prime Rib has and then you are going to TURN THE OVEN OFF & NEVER OPEN THE OVEN DOOR until it is done.

Please remember to use an oven safe meat thermometer in the Prime Rib so that we can monitor it with the oven light.  We have switched to the Weber iGrill which is a blue tooth meat thermometer and it is wonderful!  You can monitor temperatures without opening up the oven, grill or smoker.  We use it all the time.

To obtain the crust that you like is personal preference,  We like a nice crust on our Prime Rib so we do 5 minutes for every pound of the Prime Rib Roast.  (5 min/1 lb.)  So a 5 lb. Prime Rib should cook at 500 degrees for 25 minutes.  After 25 minutes, TURN THE OVEN OFF.  DO NOT OPEN THE OVEN DOOR.   Let the Roast cook until you have an internal temperature of 130 degrees.  A 5 lb. roast typically takes about 2 hours to get to that temperature.  Oven's vary, which is why you are going to rely heavily on the meat thermometer.

After the Prime Rib has reached the correct internal temperature, you can open the oven door and remove the Prime Rib.  It should rest for about 30 minutes prior to serving, so tent it with foil and leave it, while you are preparing the rest of that wonderful meal.  The smell is just as good as the flavor and you will smell it when it comes out of the oven!! Slice and serve and negotiate who gets the end cuts!


We use the drippings to make the gravy that goes on the mashed potatoes and we use the veggies that were the Prime Rib bed as a side dish all of their own.

Christmas Wishes

I know that sounds like a simple thing, Christmas Wishes; however, it isn't.  Wishes should always be for the best of ourself to come forward and for us to bring out the best in others.  We are all imperfect people and as we accept that about ourselves, we give ourselves the opportunity to try and learn new things, expand our horizons and be a better version of our own true selves.  I know it sounds very idealistic, but even a small change can make a huge difference in how you feel about yourself, which also impacts how others feel about you as well.

So with the advent season upon us, I pray that you and all you love make fantastic Christmas Wishes!

Time

Time is an amazing thing. When you are a kid days seem to never end. As an adult is feels like they race by at a speed that is beyond comprehension. We fill our days with so many different things to do and so many different places to be that it is a challenge to get them all done and a miracle if they are all done on time. I am a professional over scheduler. I try to cram as many things into the day as I can, knowing that I will not get them all done. We have heard the talk of prioritizing. I believe in prioritizing, however for me it is a list of what is the urgent and what is not going to get done. That is the reality of my life. That is also the reason my blog is not updated as often as I would like it to be. Remember I warned you in my disclaimer!

I realize that I am not alone in the system of time management and prioritization. I think most modern day adults are. However I would rather have that issue than any other, as long as they are positive reasons that my day is packed. I am surrounded by lights that have family members who are dealing with health issues. They spend their appointment packed day at doctors' offices, treatments, and pharmacies. Trying to manage their health as well as their family, job and finances and keep their sanity all at the same time. I pray for these lights and their families all the time. It does not seem right that so many families are dealing with so many health issues. I know as you get older, you are prone to know more lights who are having health related issues. It just feels wrong that so many lights are having these issues. It brings up the power of faith, prayer and the most important light of all.

I believe that you need to have faith to survive. I think the saying goes "God won't bring you up to something that he doesn't think you can get through. You just have to have faith in him and you will get through." It takes time to get through these things. When you are going through a health related issue it seems like time moves at the same pace it did when you were a child. The difference is that when you were a kid you could sleep at night. Night time seems to be scarier when you are an adult going through a health related issue. That is the time when your mind is free to think about all the possibilities of what could happen, when the light is gone. As a child if you had a bad dream you could go wake your parent for reassurance and comfort. Now you are the parent who needs the reassurance and comfort. I pray for people to find the light in the night when they need the reassurance the most. I pray for them to have the patience that will allow time to heal their wounds and make them whole again. I pray that during this struggle their faith will be stronger and they will have found peace and the brightest light of all. I pray that these lights will return to good health. With time I know they will.

Disclaimers

Before we get too far into this, there are some things you should know:

I write like I talk! I use technology to save me as much as it can, however even it can't keep me error free. (At work I have a wonderful bright, white light who proof reads all my work.)

I am a real person. This is not a computer generated thing that is trying to extract something from someone.

I try to be tactful, genuine and sincere about what I say. I don't know how to be any other way.

I have a tendency to put others first and over schedule my days. Therefore, I may not be able to write a new blog every day.

I may say things that others do not agree with. I believe each person has a right to their thoughts and opinions. I also believe that they have the right to express those thoughts and opinions. However they need to do it in a respectful way. I think a lot of people have forgotten that you can respectfully disagree with other people. It does not mean that you dislike them if you disagree with them. You just have different ideals.

Sometimes I ramble. I like to tell stories to get my point across.

I know that all these things make me sound like I am 60+ years old, I am not.

I am not an astrological scientist who follows all the lights of heaven and earth. I am just a person who tries to see the light inside all other people.

I am an optimist. If you are looking for something to read that is depressing, I suggest any major newspaper, television station or web site.

I don't get to work interruption free. I won't get to finish my thought on the first try. So I will try to condense things down, which sometimes causes issues with getting the true meaning across. If you are not sure what I meant, ask.

My point in you seeing my disclaimers list is that you will realize that I am just another person, who has a light. I am not a Hollywood celebrity, famous singer, talented athlete, politician, or corrupt business person. You would not recognize me on the street, and if you met me, you probably would not remember my name. However I have a light and that is what makes me special. I am surrounded by people who have lights, and they are special. Every person I have ever met has a light, and they are special. Living with lights

What does that mean, "Living with lights"? In my view all people have a light. They each have their own personal glow. Young, old, big or small all people have a light. Each person's light has a glow and a color. The brightness and colors may change as they go through their life, just as my color and brightness changes as I go through my life. When peole pass away from us, their color and brightness stays with the ones who were touched in any way by that person. The stronger the connection the more of that person's color and brightness we keep. It is added to our own personal light. I also believe in the ultimate light of God. That is the light I am striving to be in the glow of when it is my time.
